Let’s start by peeling the lemon. When removing the lemon zest, make sure you don’t cover the bitter white bloom of the lemon. For the lemon to be well rinsed from pesticides, the peel should be wetted. Place the zest in a saucepan with water, apple cider vinegar, and baking soda. Leave it on for 20 minutes to absorb. You can gently scrub the skin with a brush.

After soaking the peel, cut it into small pieces and place in a glass jar. Fill with alcohol. Pure vodka is the best choice. This will accentuate the taste and aroma of the peel.

Close the jar tightly and let it macerate for at least 2 weeks. If you want a more intense scent, leave it on for a month or two. Remember to shake the jar once a day. Remember that lemon peel is high in oxalate. Therefore, it is not recommended for people with kidney stones.
